Anyone else remember being a kid and having their parents make them pancakes on the weekend? 🥞
I remember waiting with my Barbie plate in hand for me to get my hands on the delicious stack my mom had growing next to the stove.
Now, more than a decade later I decided to make my family a twist on those weekend stacks.
I present to you KETO CHOCOLATE CHIP PANCAKE POPPERS made with @ketoandco’s pancake mix. Low carb, tasty, and with a hint of chocolate morsels, these pancake poppers quite literally can be popped into your mouth!
I used a cake pop mold (for the first time) to make these and they came out wonderfully! 😍 Couldn’t be happier.
These are SUPER easy to make and fun for the whole family!
Ingredients for Keto Pancake Poppers
- 1 bag of Keto and Co Keto Pancake and Waffle Mix
- unsweetened almond milk
- eggs – Eggs are an important part of this recipe as it will help bind everything together and make them cakey! Plus, they add a ton of protein.
- coconut oil
- Lilys Chocolate morsels

Can you freeze Keto Pancake Poppers?
You can freeze these if you want, however, I personally like eating them the day of or the next day. You can keep for a day or two on the counter top.
How do you reheat poppers?
You can reheat them quickly in the microwave or toaster oven!

Keto Pancake Poppers
Ingredients
- 1 pack of Keto and Co pancake mix
- 6 tbsp unsweetened almond milk
- 4 eggs
- 2 tbsp coconut oil
- 3/4 cup keto morsels (a few morsels per popper)
Instructions
- Preheat your oven to 375F
- In a medium bowl whisk your eggs, almond milk, and your coconut oil together.
- Next, add in your pancake mix and gently combine.
- Add 3/4 cups of sugar-free chocolate morsels (Lilly’s is my go-to)
- Using a small spoon, fill each cake pop mold with pancake batter and place it in the oven.
- Bake for 12 minutes. You can stick a toothpick through them to make sure they come out clean)
- Let them cool for 5 minutes and serve with your favorite toppings!
