Delicious Healthy Coffee Cake

You are going to love this healthy, low carb coffee cake that is sweetened with Lakanto’s Monkfruit Baking Sweetener. I think it has to be my favorite thus far. It doesn’t seem to have as MUCH of a cooling effect as some others. You can find yours here on Amazon.

  • Pecan flour/almond flour. Find it on Amazon here.
  • Butter melted
  • Lakanto sugar-free baking sweetener 
  • Cinnamon
  • Optional – Chopped walnuts

This Keto Coffee Cake is one of my favorites because it is packed with protein, but can still be passed off as a dessert or snack. It’s just sweet enough without being too much! This coffee cake can be stored on your countertops for a few days or in the fridge for up to a week. I hope you try this cake out and love it just as much as I do!

Keto Coffee Cake

Ingredients

  • 4 eggs
  • 3 scoops Nuzest protein powder
  • 1/2 cup cashew butter
  • 1/8 cup lakanto sugar-free baking sweetener
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 rsp baking powder

Crumb topping

  • 3/4 cup pecan flour/ almond flour
  • 1/4 cup meltted butter
  • 1/4 cup Lakanto sugar free baking sweetener
  • 1 tsp cinnamon
  • 1/4 cup chopped walnuts optional

Glaze

  • 1/2 tbsp almond milk
  • 1/4 cup powdered sugar (sugar free from Lakanto)
