Growing up I was never allowed to have the fun cereals that everyone was eating 😐 Although it was probably for the best, I got stuck with special K and other wheat/ bran combos!
Now I know Cinnamon Toast Crunch is loaded with sugar so I thought why not ketofy it!?! 🤓

Best Breakfast Cereal
I am calling this the BEST breakfast cereal because it packs in the best flavors and literally takes you back in time to your. Childhood days! It’s got a lot of ingredients that make it taste super amazing!
- Butter
- Monk fruit sweetener (this is my favorite one)
- Egg
- Flour (gluten-free)
- Cinnamon
- Xanthum gum (this is my favorite one)
- Baking soda
How to Make this Keto Cinnamon Toast Crunch Cereal
To make this healthy cereal, it takes a few steps so get ready to get baking! My biggest advice is make sure to follow this recipe exactly how it is !
Whisk, Sweeten, Store
Grab yourself a medium bowl and whisk your xantham gum, almond flour, cinnamon, baking soda, and salt. Then get your. Butter ready and cream it in a mixer for 2-3 minutes!
Slowly add in your sweetener until light and fluffy. Next, crack your egg and mix! Now its is time to wrap cereal dough with Saran Wrap and refrigerate for an hour!
Bake
An hour has passed and it is time to preheat your oven to 350F. Bake for 8-12 minutes, until fully golden.
Coat & Add
Once your cereal is done cooking, let it cool for a few minutes. When it is still warm coat each piece with butter and sprinkle your sugar mixture over each piece.
You could also let them cool completely, butter each piece and then toss your cereal in a bag with sugar.
Storage
Store your cereal in an airtight container in a. Cool, dark place in your kitchen. C cereal should last up to 2 weeks.
Serving Suggestions

Keto Cinnamon Toast Crunch
Ingredients
- 1/3 cup butter
- 1/3 cu[ golden monk fruit sweetener
- 1 egg
- 2 cups flour
- 1/2 tsp xanthum gum
- 1/2 tsp baking soda
Topping
- 3 tbsp golden monkfruit sweetener
- 2 tsp ground cinnamon
- 2 tbsp melted butter
Instructions
- Grab yourself a medium bowl and add almond flour, cinnamon, xanthan gum, baking soda, and salt. Whisk until thoroughly combined and set aside.
- Cream your butter in a bowl with an electric mixer,( 2-3 minutes). Slowly add in your sweetener and mix until light and fluffy.
- Next Add in your egg. Your mixture should not look cohesive. Instead it should be. Kinda clumpy when you are finished mixing.
- With your mixer on low, add in half of your flour mixture- mixing until just incorporated. Mix in the rest.
- Wrap cereal dough with saran wrap and refrigerate for at least an hour!
- Preheat oven to 350°F
- When an hour. Has passed, place your dough between two pieces of parchment paper until nice and thin. Cut dough lengthwise and then crosswise into squares.
- Transfer squares to parchment lined baking sheet.
- Bake for 8-12 minutes, until fully golden. Keep tabs on them so that they don’t get burnt.
- When they are done. let them cool for a few minutes and brush melted butter and sprinkle your cinnamon sugar on top.
- Allow them to cool for ten more minutes or longer before transferring them to another container. They will begin to crunch up even more!
- Store in an airtight container for up to 5 days.
