Coffee Shop + Keto Chocolate Muffin = HEAVEN
I’ve recently become obsessed with coffee shops and finding cute places where my fiance and I can get coffee or a chocolate dessert (because HELLOOO chocaholic over here!!). I think part of it is that coffee shops are romanticized. The aesthetic is just so amazing. Maybe I’m weird.
The things I look for when I go to a coffeee shop are:
- Ambiance – It’s all about the vibe and look of the coffee shop. I absolutely love it when it is “insta. worthy”. This means cute decorations, soft music in the background and just overall good service.
- FOOD/SNACKS– I love me a shop that has some other tasty treats besides coffee. I am a big chocolate person, so if I see chocolate, I’M SOLD! In my town there is a coffee shop with chocolate treats behind a glass. It makes my HEART SMILE.
So, I took my experiences at these coffee/chocolate shops and got to work on these Keto Chocolate Cupcakes. I love the rich chocolate flavor they have when you bite into them. Let’s also not forget how awesome frosting is!!
Cupcakes > Cake
I said it first!!
I feel like there aren’t a lot of healthier cupcake recipes out there. Maybe it’s just me, but cake seems to outshine my poor cupcakes.
Let me tell you cupcakes are super fun to play around with. Also, as I was baking, I started wondering what makes a cupcake different than a muffin! Now THAT is some food for thought.
Ingredients for this Keto Chocolate Cupcake
- eggs
- vanilla extract
- monk-fruit powdered sugar –> I use this one
- unsalted butter melted
- almond flour (Bob’s Red Mill is my fave)
- pecan flour
- baking powder
- coconut milk
- coconut oil
- sugar-free milk chocolate morsels. I use this one.
How to Make Cupcakes
Baking in general is therapeutic for me! There are so many things I love about it! A guilty pleasure of mine is tasting the batter. SHHHH don’t tell anyone. Below are some of the tools I used to whip these Keto Chocolate Cupcakes up.
- Muffin tin: It is so important to get yourself a sturdy muffin tin that doesn’t pop in the oven.
- Cupcake Liners: I HATE when cupcakes or muffins get stuck to the pan. If you don’t have a nonstick pan. get these liners instead!
- Cooling Rack: A cooling rack allows your cupcakes to cool completely without it getting stuck to the counter or dish
That’s it! Once you’ve got these tools you will be ready to start baking in no time!

Keto Blackout Chocolate Cupcakes
Ingredients
- 4 eggs
- 1 tsp vanilla extract
- 1/2 cup monk fruit powdered sweetener
- 3 tbsp unsalted butter
- 1/2 cup almond flour
- 1/4 cup pecan flour ( or 3/4 cup almond flour)
- 1 1/2 tsp baking powder
Frosting Details
- 1/4 cup coconut milk
- 1/4 cup coconut oil
- 1 cup Lily's milk chocolate morsels
Instructions
- Preheat oven at 350F
- in a medium. bowl mix your liquids together. Then graduall add in your flour. Mix with your spatula
- Line your pan with cupcake liners or just lughtly coat withcoconut oil or baking soray
- Fillyour muffin tin about 3/4 way
- Bake for 20-25minutes (mine were perfect at 22)
- While this is baking, in a double boiler mix your frosting ingedients
- Mixwelland then set aside in the freezerfor 15-25 minutes
- Takeout andwhisk! Top your cupcakes and enjoy!!
