I feel like pumpkin has taken over the fall season. When it comes to pumpkin treats you can do so much more than a pumpkin pie! Pumpkin is a great addition to so many baked goods!

Baking Tips + Tricks

Baking with pumpkin is easier than you think! Some people like using it as a main ingredient or using it as a substitute for oil.

Here are some tips when baking with pumpkin:

  • you can use canned pumpkin when a recipe calls for pumpkin purree
  • If you are substituting pumpkin for oil the ratio is 1:1
  • Be sure that pumpkin baked goods are cooked. Pumpkin adds a bit of moisture to your baking.

Do I need to use muffin liners?

You. do not need muffin liners for these if you have a nonstick pan that you have sprayed with cooking spray

How do I make Muffins Fluffy?

Baking soda is what helps make these healthy pumpkin muffins fluffy. Make sure your baking soda is not expired. The other thing to watch out for is that you do not overmix!

Can I freeze pumpkin muffins?

Yes!! You can freeze pumpkin muffins! Let the muffins cool completely before labeling your bag. Remove the air from your bag and store it for up to 3 months.

Does pumpkin puree go bad?

Yes, it can and it has happened to me! After opening, you can transfer to an airtight container and keep it in the fridge for 5-7 days.

Healthy Pumpkin Spice Muffins

Low Carb | Easy

Ingredients

  • 2 eggs
  • 2 tsp vanilla exract
  • 2/3 cup pumpkin pure
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ground nutmeg
  • 1 cup almond flour blend (almond flouor + all purpose flour)
  • 1 tsp baking powder
  • 1 tsp baking soda

Crumb Topping

  • 2 tbsp coconut oil
  • 1/2 cup almond flour blend
  • 1/4 cup coconut sugar
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon

Instructions

  • Preheat your oven to 350F.
  • In a medium bowl add your wet ingredients. Next, add in your maple syrup and mix.
  • Add your spices and stir. Then pour in your flour, baking powder, and baking soda. Mix until combined.
  • In a separate bowl start making your crumb topping. Mix together. You can use your hands to get a good crumble.
  • In a nonstick muffin tin, pour your bad 3/4 of the way. I fille dup 9 muffin slot sin a medium tin. When you. poured your batter in, add your crumbs on top!
  • Bake for 18-20 minutes
