Healthy Pumpkin Spice Muffins
Ingredients
- 2 eggs
- 2 tsp vanilla exract
- 2/3 cup pumpkin pure
- 1/4 cup maple syrup
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1/4 tsp ground nutmeg
- 1 cup almond flour blend (almond flouor + all purpose flour)
- 1 tsp baking powder
- 1 tsp baking soda
Crumb Topping
- 2 tbsp coconut oil
- 1/2 cup almond flour blend
- 1/4 cup coconut sugar
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
Instructions
- Preheat your oven to 350F.
- In a medium bowl add your wet ingredients. Next, add in your maple syrup and mix.
- Add your spices and stir. Then pour in your flour, baking powder, and baking soda. Mix until combined.
- In a separate bowl start making your crumb topping. Mix together. You can use your hands to get a good crumble.
- In a nonstick muffin tin, pour your bad 3/4 of the way. I fille dup 9 muffin slot sin a medium tin. When you. poured your batter in, add your crumbs on top!
- Bake for 18-20 minutes
