These Gluten-Free Banana Muffins are moist and easy to make with pantry staples! You can also add chocolate chips to make these banana chocolate chip muffins. They are easily customizable and can be eaten as a breakfast or a dessert!
How to Mash Bananas
Any banana recipe begins with ripe or overripe bananas. Use a big fork, potato masher, or a mixer to start mashing.
If you do not have ripe or overripe bananas, you can quickly ripen them in the oven.
How to Quickly Ripen Bananas
If you don’t have ripe bananas on hand you can always ripen them in the oven. Place the bananas on a foil-lined baking sheet in a 300F oven for 30-40 minutes, until the peels become lack and shiny!
Gluten-Free Banana Muffins Ingredients
- mashed bananas: adds banana flavor
- melted butter (coconut oil): adds fat and moisture
- egg: binds the batter together
- coconut sugar: adds sweetness and flavor (can sub for regular sugar)
- vanilla extract: a must for flavor!
- gluten-Free All-purpose flour: King Arthur’s Gluten-Free All Purpose Flour is my favorite one to use!
- cinnamon: banana muffins NEED cinnamon!
- baking soda: helps lift the batter
How to Properly Measure Flour:
- fluff the flour with a fork
- use a knife to level off the flour in the measuring cup
- use a spoon to scoop your flour into a measuring cup

How to Make Gluten-Free Banana Muffins
- Preheat your oven to 325F.
- Mash your bananas. In a mixing bowl combine the mashed bananas, oil, sugar, egg and vanilla extract. Stir to combine with a spatula.
- Add in the gluten free flour, baking soda, cinnamon, and salt, stir together with a spatula.
- If adding chocolate chips, mix them in now.
- If adding chocolate chips, mix them in now.
- Bake for 25-30 minutes. Stick a toothpick in them to check if they are done.
How to Freeze Banana Muffins
Allow the gluten-free banana muffins to cool completely first. I like to wrap them in cling wrap and then put them in a ziplock bag.
To thaw, let them come to room temperature or place them in the microwave for 15 second intervals.
