- Vanilla extract – a must in all baking recipes

In a small bowl, add the coconut oil, maple syrup, eggs, and vanilla extract. Whisk together. Then add in your dry ingredients. Be careful not to over mix because this will result in tough muffins.
Afterwards, add in your cut up apples.

GF Apple Crumb Muffins
Ingredients
- 2 eggs
- 1/2 cup coconut oil
- 1 tsp vanilla extract
- 1/2 cup maple syrup
- 1 tbsp apple pie spice
- 1 1/2 cup almond flour
- 1/2 cup oat flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 large apple chopped
Apple Crumb Top
- 1 cup GF all purpose flour
- 1/2 cup packed brown sugar
- 1 tsp cinnamon
- 1/2 tsp apple pie spice
- 1 stick unsalted butter
- pinch of salt
Instructions
- Preheat the oven to 350F.
- Wash, core, and chop the apple into small pieces.
- In a bowl whisk together the wet ingredients.
- In a separate bowl, mix the apple muffin dry ingredients till there are no clumps.
- Gently combine the wet and dry ingredients. Don’t overmix!
- Fold the apple pieces into the batter.
- In a separate bowl, mix your crumb ingredients. Make sure to soften/ melt your butter first.
- Scoop the batter in a lined or greased muffin pan and add the crumble on top. Fill the batter close to the top.
- Bake on 350F for 16 – 18 minutes on or until a toothpick comes out clean after inserting in the middle.
