Gingerbread Mug Cake Ingredients:

  • All-purpose flour: Provides structure and texture to the cake.
  • Brown sugar: Adds sweetness and moisture to the cake, along with a slight caramel flavor. I liked using dark brown sugar for this recipe!
  • Baking powder and baking soda: Act as leavening agents to help the cake rise and become fluffy.
  • Ground ginger, cinnamon, and cloves: These spices bring the characteristic warm, aromatic, and spicy flavors associated with gingerbread.
  • Molasses: Adds depth, richness, and a distinctive molasses flavor to the cake, a key ingredient in gingerbread.
  • Milk: Adds moisture to the batter to ensure the cake is soft and tender. You can use any milk you want. I used almond milk.
  • Unsalted butter: Provides richness and contributes to the cake’s moistness when melted. My favorite brand is Land O Lakes.
  • Vanilla extract: Enhances the overall flavor profile of the cake. Love adding splash in any of my baking.
  • Salt: Balances the sweetness and enhances the flavors in the cake. You might not think you need it, but it does make a difference!!

Instructions:

  1. In a microwave-safe mug, whisk together the flour, brown sugar, baking powder, baking soda, ground ginger, ground cinnamon, ground cloves, and a pinch of salt.
  2. Add the molasses, milk, melted butter, and vanilla extract to the mug. Stir until the batter is smooth and well combined.
  3. Microwave the mug on high for 1 minute and 30 seconds to 2 minutes, or until the cake has risen and set in the middle.
  4. Allow the mug cake to cool for a minute or two before topping it with whipped cream or a scoop of vanilla ice cream, if desired.
  5. Serve immediately and enjoy your warm and comforting Gingerbread Mug Cake!
