Flourless Pumpkin Bars!?
What’s amazing about these bars is not what’s in them, it’s what’s NOT in them. Try saying them ten times fast haha! There is no flour. (yup, not even almond or coconut flour!), no oil or butter, and they only contain a small amount of added sugar if you don’t use it sugar-free morsels. I’ve never really baked much without flour, but I can tell you I am honestly LOVING IT.
Another thing I love about these Flourless Pumpkin Bars is that they come together in MINUTES. You can blend everything in your blender for an easy cleanup, or use your regular old mixing bowl to get this done.
This recipe was tested by my fiancé and my sister. It got a thumbs up from them so I am so excited to share it with you guys today!

When it comes to my desserts, I try to use wholesome, nutrient-dense ingredients that not only taste good but are good for you!
Pumpkin Puree: You may not know this but pumpkin is a great source of vitamin A. Also, when you buy pumpkin puree, make sure to buy the unsweetened one with no additives.
Honey Almond Butter/ any nut butter: Almond Butter or Sunflower Butter adds just the right amount of thickness and flavor. Make sure your nut butter is drippy. Don’t have almond butter, try cashew butter!!
Pumpkin Pie Spice: this spice is truly necessary in all of your pumpkin goodies!
Maple Syrup: My go-to maple syrup is ChocZero. It is zero sugar and is an awesome replacement for the real thing. it not only adds sweetness but a little bit of warmth to your flourless pumpkin blondies.

Flourless Pumpkin Blondies
Ingredients
- 1 egg
- 1/2 cup ChocZero maple syrup
- 1 cup honey almond butter (any nut butter will do)
- 1/2 cup pumpkin puree
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tbsp pumpkin pie spice
- 1 tsp baking soda
- 1 tsp baking powder
Instructions
- Preheat oven to 350F and prepare an 8×8 baking sheet by lining it with parchment paper.
- Add all of the ingredients, with the exception of the chocolate chips, in a medium bowl and mix until creamy and smooth.
- Pour batter into your prepared baking panand sprinkle with chocolate chips. Also have the option to add chocolate chips to the batter.
- Bake for 20-25 minutes. Allow to cool before cutting.
- Store in fridge for up to 5 days.
