The Perfect High Protein Breakfast
Why skip some good ole breakfast nutrition when you can get an extra boost of protein in the morning? I fell in love with these egg breakfast biscuits as soon as I made them because they were DELISH, a great source of protein, AND you can even squeeze in some veggies in there. Did I mention they are super easy to pop into the microwave?
I’ve been on a little egg kick lately between making deviled eggs, scrambled eggs, these egg biscuits, and quiche. No matter how you slice it, I love it all, and they are always protein-packed!

You can feel free to use any of your favorite vegetables that you have in the refrigerator. Just be careful with root vegetables. They typically need a longer time to cook

You can store these biscuits in the refrigerator for up to 5 days. Just make sure your breakfast is cooled before sealing them into a container and placing them in the refrigerator.
Can I freeze them?
So my grandma is a HUGE advocate of freezing your food. Her freezer is overflowing with baked goods, it’s insane. She has frozen biscuits before so it CAN be done, however, I did not try with these. So experiment and let me know what happens haha.

Ingredients
- 1 cup broccoli florets, chopped
- 1/2 cup shredded cheese
- 1/4 cup diced ham
- 1/4 cup coconut flour
- 1 tsp baking powder
- pinch of salt
Instructions
- Preheat oven to 350F and line baking sheet with parchment paper
- Mix all ingredients together in a medium bowl then scoop and transfer to a baking sheet
- Place into the oven for 18-20 minutes (mine were ready in 18 minutes)
