EASY QUINOA SALAD INGREDIENTS
- Quinoa uncooked
- Cherry tomatoes
- Black beans
- Red onion
- Avocados
- Homemade dressing
If you’re wondering what the white things are, I added some small balls of fresh mozzarella. I’m such an Italian. I know.
If that isn’t your jam, the salad will be totally okay without it! Substitute for something else you love like corn or olives!
Even though I feel like I say this all the time, this easy Quinoa Salad recipe is rather easy to make.
Make sure you cook your quinoa in a separate pot, reduce to low, and let it simmer until the water is absorbed.
When the quinoa is done, make sure to let it cool in the refrigerator. In the meantime, it’s time to get started on the dressing!
Making your own dressing allows for the best of both worlds!!
Once again, you can make these with items found in your kitchen.
WHAT YOU NEED:
- Olive oil
- Apple Cider Vinegar
- Lime juice
- Garlic powder
- Salt
[You can add a little bit of lemon juice for more flavor 🙂 ]
While the quinoa is cooling in the fridge, make sure to mix together your dressing. When that’s done, mix all your ingredients together in a large bowl and serve!
ENJOY! Don’t forget to top it with some avocados! 😉
