Easy Protein Chocolate Muffins Ingredients

  • Bananas + maple syrup: some natural sweeteners to give these muffins the best flavor
  • Oat flour
  • Cocoa powder: for chocolate flavor
  • Chocolate protein powder: Use your favorite brand! 
  • Cashew butter: extra protein and texture 
  • Almond milk: you can use whatever milk you prefer
  • Baking powder + salt: to help the muffin rise and for flavor

How to Make Easy Protein Chocolate Muffins

  1. Mix wet ingredients: mash your bananas in a large bowl and pour the rest of your wet ingredients on top/
  2. Mix dry ingredients: combine all dry ingredients in a medium bowl 
  3. Combine both: combine wet and dry ingredients 
  4. Transfer: line your muffin tin with muffin liners and fill each one up 3/4 of the way.
  5. Bake: bake at 350F for 20-25 minutes

Favorite Baking Tools

  • Muffin tins: make sure to use a firm muffin tin that does not bend or pop in the oven 
  • Muffin tin liners: One of the worst things is having to scrape dirty muffin tins that you can't get clean. Get these reusable muffin liners of you do not have a non stick pan. 
  • Cooling rack: A cooling rack is the perfect place to let your muffins cool.

How to Freeze your Muffins

  • Let your muffins cool completely.
  • Transfer muffins onto a baking sheet and freeze for 1-2 hours. Then, transfer muffins into a bag and remove as much air as possible. 
  • Freeze for up to 3 months.

Easy Protein Chocolate Muffins

Ingredients

  • 1 1/2 ripe banana
  • 1/3 cup oat flour
  • 1/4 cup cocoa powder
  • 1/3 cup chocolate protein powder
  • 1/4 cup maple syrup
  • 1/4 cup cashew butter
  • 1/4 cup almond milk
  • 1 1/2 tsp baking powder

Instructions

  • Preheat oven to 350F
  • In a large bowl mash your banana. Add maple syrup and nut butter. Stir to combine.
  • Then add in your oat flour , protein powder, cocoa powder and baking powder
  • Slowly pour in the milk and mix
  • Fill 2/3 of each muffin mold with batter and sprinkle with chocolate chips. Bake for 20-25 minutes
