- Unsalted butter: I used one stick of I Can’t Believe It’s Not butter and one Land O Lakes unsalted butter. Make sure it is softened.
- Sugar: I used both brown and white sugar to give it a soft yet crisp texture.
- Eggs:
- Vanilla extract: use a little or a lot! It lends so much flavor to your cookies!
- All purpose flour:
- Baking soda & salt: helps with flavor and rising.
- Cinnamon: for that warm cookie flavor
- Oats: If you want the cookies to be crispy, try only quick oats

- I used old fashioned oats. You can use quick oats, but I prefer old fashioned oats
- I really like making these cookies large in size. I would use either a medium or large cookie scoop.

Crispy Chewy Oatmeal Cookies
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup I can't Believe It's Not Butter
- 1 cup dark brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 cups oats
Instructions
- Preheat oven to 375°
- Combine flour, baking soda, cinnamon, and oats in a bowl and set aside.
- Using a hand-held or standing mixer, beat together softened butter and sugar until creamy.
- Add in eggs, blending in one at a time.
- Pour in vanilla extract
- Add flour mixture into the wet ingredients, blending until well combined. Your batter will be sticky
- Using a wooden spoon or spatula, stir in your oats until well incorporated.
- Feel free to add in raisins or chocolate chips as you like!
- Using a cookie scooper or a spoon, place about a tablespoon of cookie dough onto your lined baking sheet leaving ample room for spreading.
- Bake for 8-10 minutes.
