This Quinia Risotto is a much simpler version of your traditional dish. I only used 2 separate pans/pots for it and there is minimal clean-up! This Creamy Mushroom Quinoa. Risotto still has the same creamy texture, amazing flavor, and cooks like a risotto does.

- chicken broth
- heavy cream
- parmesan cheese

What to Serve with Creamy Mushroom Risotto
This dish is rich and full of so much flavor! You can definitely add some greens into this dish. I almost considered adding spinach. This will definitely be a go-to dinner of mine this fall! It is also perfect for meal prep.
As a main dish: A light salad would be perfect as a side to this creamy dinner
As a side: Serve it with a simple chicken breast. Add some roasted broccoli or asparagus as well.

Got Leftovers?
The best thing about this dinner is that you can easily microwave it or reheat it!
To Reheat: Add a little milk or broth to your bowl before heating it up.
To Freeze: Store in an airtight. container. Let thaw in the fridge and reheat following the above.

Creamy Mushroom Quinoa Risotto
Ingredients
- 1 cup white quinoa
- 8 oz mushrooms
- 2 garlic cloves
- 1/4 cup onion chopped
- 1 tbsp olive oil
- 2 tbsp butter
- 3/4 cup chicken broth
- 1/4 cup heaavy creaam
- 1/2 cup gratedparmesaan cheese
- salt and pepper to taste
Instructions
- In a small pot boil your quinoa. Bring it to a boil and reduce to simmer until all the water has been absorbed (about 15 minutes)
- While the quinoa cooks , add your olive oil and mushrooms to a park over medium heat. Cool until mushrooms have softened .
- Add in your onions and garlic as wel as the butter. Mix to combine for a few minutes .
- When your quinoa is done toss that in with the mushrooms, add your chicken stock, Parmesan cheese, and heavy cream
- Keep mixing until it thickens.
