I am a BIG fan of single-serve desserts here on The Clean Eater. One of my favorite mug cakes is my Microwave Funfetti Mug Cake and I felt like it was time to add to my mug cake collection!

Cooked in a microwave. You literally can’t go wrong.
Warm and melty, this cookie dough mug cake is mouth-watering with a scoop of ice cream. Like any mug cake, it tastes best eaten right away.

Ingredients forMug Cake
- almond flour
- coconut flour
- baking powder
- cashew butter
- maple syrup or coconut sugar
- coconut oil
- unsweetened vanilla almond milk
- chocolate morsels
You can find almond flour on Amazon here.
My favorite coconut flour is Bob’s Red Mill! The texture is amazing and all of my baked goods come so delish!
Tips:
- You don’t even need a ramekin, you can make this in one of your favorite mugs. Make sure it is microwave safe first
- This can also be made in the oven: Bake at 350F for 15 minutes

Cookie Dough Mug Cake
Ingredients
- 1 tbsp cashew butter
- 1 tbsp coconut oil
- 6 tbsp unsweetened almond milk
- 1 tbsp maple syrup or coocnut sugar
- 1/2 cup almond flour
- 3 tbsp coconut flour
- 1/2 tsp baking powder
- 1/4 cup chocolate morsels (add more if you want)
Instructions
- Get a medium bowl.
- Mix all the ingredients together until combined and a batter forms Then fold in the chocolate chips.
- Pour into ramekin.
- Place in microwave and cook for 60- 90 seconds
