Tips for Cinnamon Muffins
Muffins are pretty easy to make, but if you want perfect muffins every time here are some tips you should follow!
- Don’t overmix the batter: overmixing the dough will lead to dry tough muffins
- Follow the temperature directions closely: The key to a crunchy top and a taller muffin is the higher temperature for the first few minutes of baking!
- Sour cream vs. greek yogurt: If you want your muffins moist and taller go with the greek yogurt. If you don’t have greek yogurt, you can use sour cream. It will result in a denser muffin.
How to Make the Cinnamon Swirl
The buttery cinnamon swirl is really what takes these muffins to the next level! To get a good swirl, place the cinnamon, butter, and sugar mixture in a bag and poke the muffin in a few places! You can also make a nice swirl on the top of your muffin.

Cinnamon Breakfast Muffins
Ingredients
For the Muffins
- 2 large eggs
- 1/2 cup melted butter
- 1/4 cup coconut sugar
- 1/2 cup light brown sugar
- 3/4 cup sour cream
- 2 tsp vanilla extract
- 2 tsps cinnamon
- 2 cups all purpose flour
- 1 tbsp baking powder
- 3/4 tsp salt
Cinnamon Sugar Swirl
- 4 tbps unsalted butter
- 1/2 cup dark brown suagr
- 3 1/2 tsps cinnamon
- pinch of salt
Instructions
- Preheat oven to 425°F. Line a muffin tin with muffin cups. Set aside.
- First, make the cinnamon sugar swirl mixture in a microwave safe bowl, microwave the butter, sugar, cinnamon, and salt in 20 second increment, stirring between each. Repeat until the butter is fully melted. Transfer the mixture to a piping bag and set aside.
- In a large bowl, combine the brown sugar, eggs, melted butter, sour cream, and vanilla extract.
- In a separate bowl, mix together the flour, cinnamon, baking powder, and salt.
- Fold the dry ingredients into the wet, mixing only until combined.
- Scoop batter into prepared muffin cups, filling just shy of the top of the cups. Snip the tip off the piping bag and make a swirl on top of your muffin or inject each muffin!
- Bake for 5 minutes at 425F, then without opening the oven, turn the oven downto 350F and bake for an extra 15 minutes.
