Super Healthy Chocolate Crunch Pound Cake
Okayyyy, you are probably thinking this much chocolate can NOT be healthy for ya, butt let me tell you why I love this one.
- I used sugar-free sweetener instead of sugar
- It has collagen which has SO many health benefits (My collagen is Vital Proteins. You can find it on Amazon here.
- Has no flour so it is low carb! The cocoa powder definitelty helps and is essential for this recipe!
Chocolate Crunch Pound Cake Ingredients
So you know at least one ingredient at this point, but what else goes into this healthy cake? Let’s get right to it
- eggs
- unsweetened cocoa powder
- collagen
- sunflower butter
- baking soda
- monkfruit sweetener. I use this one.
- Lily’s semi sweet morsels
- Undercover Snacks
Now that you have all the ingredients, let’s see what else is important before you start throwing everything together!
Chocolate Crunch Pound Cake Tips
- The pan you use matters! There isn’t necessarily a wrong answer here, but a metal loaf pan distributes the heat more evenly than a ceramic pan.
- Do not overcook. Baking this for too long will make it dry. If that happens, I would add some Cool Whip on top or have it with your coffee/milk.
- CHOCOLATE. Load this baby up with chocolate. If you are a chocolate lover then I say go ham with adding chocolate morsels. You can also use whatever morsels fit your dietary needs. I ended up using Lily’s Sweets sugar-free semi-sweet morsels to keep this low carb and low sugar.
Chocolate Crunch Pound Cake
Ingredients
- 4 eggs
- 1/2 cup unsweetened cocoa powder
- 2 scoops collagen
- 1 cup sunflower butter
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/3 cup monkfruit sweetener (lakanto)
- 1/2 cup Semi Sweet Morsles (Lily's Sweets)
- chunks of chocoalte bar for top of loaf
- Undercover Snacks for crumbling on top (or inside)
Instructions
- Preheat oven to 350F
- Mix eveyrthing intto a medium bowl and combine with a wooden spoon or spatula
- Slowly add in your chocolate morsels until well incorparated
- Line your loaf pan with parchment paper and pour your batter inside. Top with some more choocoalte chunks and some Undercoversnacks. Add the rest once it come out of the oven
- Bake for 30 minutes
