Step-by-Step to Making Chocolate Covered Raspberry Bites
Step 1: Gather Your Ingredients To create these luscious chocolate-covered raspberry bites, you’ll need the following ingredients:
Step 2: Preparing the Raspberry Filling In a bowl, mash the raspberries with a fork until you have a slightly chunky consistency. Add the chia seeds and honey, and mix well. Let the mixture sit for about 10 minutes to allow the chia seeds to absorb the liquid and create a jelly-like texture.
Step 3: Forming the Raspberry Bites Using a small spoon or a melon baller, scoop out small portions of the raspberry mixture and roll them into bite-sized balls. Place the formed raspberry bites on a baking sheet lined with parchment paper.
Step 4: Freezing the Raspberry Bites Transfer the baking sheet to the freezer and let the raspberry bites freeze for about 30 minutes. This will help them firm up, making them easier to dip into the chocolate.
Step 5: Dipping in Dark Chocolate Melt the dark chocolate in a microwave-safe bowl or using a double boiler. Dip each frozen raspberry bite into the melted chocolate, ensuring it is fully coated. Use a fork or a toothpick to lift the coated bite out of the chocolate, allowing any excess to drip off.
Step 6: Setting the Chocolate Place the chocolate-coated raspberry bites back onto the parchment-lined baking sheet. Allow them to set at room temperature or, for faster results, place them in the refrigerator for about 15-20 minutes. Once set, your chocolate-covered raspberry bites are ready to be enjoyed!
How-To Store Chocolate-Covered Raspberry Bites
Once the raspberry bites are frozen, transfer them into an airtight container and store them in the freezer for up to 2 months. I would let them chill for a minute or 2 before biting into them!
