No-bake treats are always fun to make since you don’t have to turn on the oven. Am I right? These Brownie Cashew Fudge Bars are sugar-free, low carb, and gluten-free). They taste like creamy, richly flavorful, frozen chocolate fudge.
Sugar-Free, Low Carb, and Gluten-free No-Bake Brownie Cashew Fudge Bars
These bars are made without any gluten, dairy or refined sugars. I sweetened them up with ChocZero’s keto maple syrup and Lakanto’s powdered baking sweetener. They are the perfect combination of salty and sweet!
How to Store These Bars:
I like cutting them into bars and storing them in an air-tight container in the freezer. I will let them sit out for about 5 minutes to soften up a bit before biting into them. You can also store them the same way in the fridge. However, for this recipe, I would advise the freezer for a firmer bar.
Ingredients for these Brownie Cashew Fudge Bars:
Brownie Bottom
- almond flour
- cocoa powder
- unsweetened almond milk
- sticky sweetener (Maple syrup. This is the one I used)
Chocolate Cashew Topping
- cashew butter
- coconut oil (This is my favorite brand)
- unsweetened cocoa powder
- maple syrup
- Lakanto baking powder
How to Make These No-Bake Bars
This is simply a matter of mixing the bar ingredients together and pouring your cashew layer on top! The hardest part for sure is waiting for the bottom layer to harden before pouring the top part. HAha. But don’t worry it isn’t TOO long of a wait, and you can always eat these before they are fully solid. I personally like to pop them in the freezer because it makes them ready to go much quicker.

Brownie Cashew Fudge Bars
Ingredients
- 2/3 cup almond flour
- 2/3 cup cocoa powder
- 1/3 cup almond milk
- 1/3 cupu maple syrup sticky sweetener
Chocolate Cashew Topping
- 6 tbsp creamy cashew butter
- 3 tbsp coconut oil
- 2 tbsp un sweeteneed cocoa powder
- 1 tbsp maple syrup I used Choczero
- 1 tbsp Lakanto. powdered baking sugar
Instructions
- In a medium bowl mix your chocolate base.
- Line an 8×8 pan with parchment paper and spread your chocolate bottom.
- Place in freezer while you start making your top part.
- In another bowl mix your toppings.
- When your brownie bottom is hardened take out of the freezer and add yu our cashew topping.
- Place back in freezer for another 10-15 minutes and enjoy !!
