If you’re wondering why we’re making such a fuss over brown butter, it’s because it brings out an incredible depth of flavor that regular melted butter just can’t match. The nuttiness of the brown butter pairs perfectly with the sweet, caramel notes of the toffee, making these cookies seriously addictive.

Ingredients for Brown Butter Toffee Chocolate Chip Cookies

  • Egg + egg yolk: the extra yolk will help your cookie be chewy and not cakey. 
  • Brown sugar + white sugar: I love mixing the two to really compliment the toffee flavors and get that chewy crisp texture. 
  • Butter: make sure to use high quality butter for the best results
  • Vanilla Extract: Vanilla enhances the overall flavor profile of your cookies, adding a warm, sweet note that complements the nuttiness of the brown butter and the toffee.
  • Sea salt: such an underrated ingredient! When I first started baking I did not realize how important salt was. It will increase the depth of flavor in your dessert. It makes these cookies taste gourmet!
  • Toffee: if you're feeling up to you, go ahead and make your own! But no shame in grabbing some from the store!
  • Chopped Chocolate:  Grab some high quality chocolate for this part! I love using bars and chopping them into chunks. The chunks of chocolate melt beautifully, creating pockets of gooey, rich chocolate in every bite.

How to Make Brown Butter

If you are a newbie at making brown butter, you HAVE to give it a go! It takes so many recipes to the next level, including these brown butter toffee chocolate chip cookies.

Step One: Grab a sauce pan and start melting your butter over medium heat.

Step Two: Slowly and consistently melt the butter to ensure it is heated evenely. The butter will start to foam as it melts. 

Step Three: Do not take your eyes off the butter!! It will easily burn! You will know it is done by the smell, the foaminess, and the light brown flecks that start popping up in your pan. Take it off the heat as soon as you see these changes. 

Step Four: Remove from heat and transfer to a bowl to allow it to cool for a bit.

Storage & Freezing

Storage: Keep your cookies in an airtight container at room temperature for up to a week—if they last that long!

Freezing: You can also freeze the dough! Scoop the dough onto a baking sheet and freeze until solid. Then transfer the dough balls to a freezer-safe bag. When you’re ready to bake, just add a minute or two to the baking time.

  • Can I make these cookies gluten-free? Yes! To make these cookies gluten-free, substitute the all-purpose flour with a 1:1 gluten-free flour blend designed for baking. Make sure your baking powder and other ingredients are certified gluten-free as well.

Brown Butter Toffee Chocolate Chip Cookies

Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar packed
  • 1/3 cup granulated sugar
  • 1 egg + 1 yolk, room temperature
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chocolate, chopped
  • 1/2 cup toffee, roughly chopped

Instructions

  • Preheat the oven to 350F and line two baking sheets with parchment paper.
  • In light saucepan heat butter over medium heat to brown it, stirring constantly until the butter begins to foam and turns a golden brown. It should emit a nutty aroma.
  • In a large mixing bowl, combine the cooled brown butter, brown sugar, and white sugar. Whisk until combined. Add the egg, egg yolk, and vanilla.
  • Next pour the flour, baking soda and salt, folding until just combined . Carefully fold in the chocolate and toffee pieces.
  • Scoop the cookies into balls and places 2 inches apart on the baking sheet.
  • Cook for 10 -12 minutes or until the edges are golden brown and the center is a bit gooey.
