  • Browned butter: Browning the butter enhances the flavor, giving it a rich, caramelized taste.
  • Brown sugar & granulated sugar: The brown sugar adds moisture and chewiness, while the granulated sugar balances the texture.
  • Egg & egg yolk: The extra yolk makes the bars extra soft and fudgy.
  • Vanilla extract: Adds warmth and depth of flavor.
  • Flour & Old fashioned oats: this recipe give the bars their chewy texture! I did not use quick oats! 
  • Chocolate chips: You can never go wrong with melty chocolate chips in every bite!

Step by Step 

  • Preheat the oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  • Brown the butter in a saucepan over medium heat until golden and fragrant. Let it cool slightly.
  • Mix the wet ingredients – In a bowl, whisk together the browned butter, brown sugar, granulated sugar, egg, egg yolk, and vanilla extract.
  • Combine the dry ingredients – Stir in the flour, oats, baking soda, and salt until just combined. Fold in the chocolate chips.
  • Bake – Transfer the dough into the pan and bake for 25-30 minutes, until golden brown and set.
  • Cool & Enjoy – Let them cool before slicing into squares.

FAQs

Can I use quick oats instead of old-fashioned oats?
I recommend old-fashioned oats because they give the bars a chewier texture. Quick oats can work, but they’ll make the bars softer and slightly less textured.

Do I have to brown the butter?
Browning the butter adds an incredible depth of flavor, but if you’re in a hurry, you can use melted butter instead. Just know that the flavor won’t be quite as rich and nutty!

How do I store these bars?
Keep them in an airtight container at room temperature for up to 3 days or refrigerate them for a longer shelf life. You can also freeze them for up to 3 months!

How can I freeze them?

  • Let the bars cool completely before slicing.
  • Place them in a single layer in an airtight container or freezer-safe bag. If stacking, separate layers with parchment paper to prevent sticking.
  • Freeze for up to 3 months.

To thaw:

  • Let them sit at room temperature for about 30 minutes or pop them in the microwave for 15-20 seconds to warm them up.

Brown Butter Oatmeal Chocolate Chip Bars

Ingredients

  • 1/2 cup butter, browned
  • 3/4 cup brow sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup flour
  • 1 1/4 cup old fashioned oats
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • flaky sea salt for topping

Instructions

  • Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a saucepan over medium heat, melt the butter, stirring continuously until it turns golden brown and smells nutty. Remove from heat and let cool slightly.
  • In a large bowl, whisk together the brown butter, brown sugar, and granulated sugar until smooth. Add the egg, egg yolk, and vanilla extract, and mix until fully combined.
  • In a separate bowl, whisk together the flour, oats, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
  • Transfer the dough into the prepared baking pan, spreading it evenly. Sprinkle with flaky sea salt if desired. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  • Let the bars cool in the pan for at least 20 minutes before slicing. Enjoy warm or at room temperature!
