If you are craving a classic chocolate chip cookie but don't feel like scooping and rolling, you need to make my Brown Butter Chocolate Chip Cookie Bars. They are an excellent dessert for any occasion and taste just like a chocolate chip cookie with the ease of a brownie.
Brown Butter Chocolate Chip Cookie Bars Ingredients
- Unsalted butter: using melted butter instead of creaming it gives the cookies bares a more fudgy texture.
- Brown sugar & sugar: the combo of sugars makes for the best flavor and texture.
- Egg: helps the cookie have some rise to it.
- Vanilla: I love lots of vanilla extract in my cookie. You can do 1/2 tbsp instead of 1 tsp
- All purpose flour: I love using King Arthur flour for all of my cookies, brownies, and cakes. You can also swap this with 1:1 flour blend.
- Salt: You might think you don't need it... but salt makes a big differenc ein your baked goods!
- Baking soda: Just the right amount for a good spread and rise.
- All of the Chocolate chips: My fave chocolate chips for these brown butter chocolate chip cookie bars are semi sweet chocolate chips, but feel free to use what you prefer!
Recipe Variations
- Chocolate Chips: if you love milk chocolate, try half semi-sweet & half milk chocolate.
- Other Mix-Ins: You can add chopped pretzels, chopped pecans, walnuts, or potato chips to make different variations!
- M&Ms: Add 1 cup of m&ms to the recipe if you want m&m cookie bars!
- Quick Bars: You can use melted butter if you don't want to wait for it to be room temperature.
FAQ + Tips for the Best Brown Butter Chocolate Chip Cookie Bars
Measure Carefully: It is important to measure your flour correctly for your bars. Too much will make the bars dense or dry. Too little and they may not set properly. You can weigh your flour or use the scoop and level method to get an accurate measurement.
Can I make them Dairy-Free? I haven't tested them dairy-free, but I think it can easily work with vegan butter sticks ( I like Country Crock and Earth Balance) and dairy-free chocolate chips (Enjoy Life!). I do not recommend coconut oil.
Try Chocolate chunks! Want to add even more chocolate? Get some gooey puddles with chocoalte chunks! You can chop up a chocolate bar to get this as well.
Can I double the recipe? yes! I would use a 9 x 13 inch pan!

Brown Butter Chocolate Chip Cookie Bars
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp bakig soda
- 1/4 tsp salt
- 1 1/8 cup all purpose flour
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan and line it with parchment paper, leaving some overhang for easy removal.
- In a saucepan over medium heat, melt the butter. Cook, swirling the pan occasionally, until the butter turns golden brown and develops a nutty aroma, about 5-7 minutes. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the brown sugar and granulated sugar. Pour the slightly cooled brown butter over the sugars and mix until well combined.
- Add the egg and vanilla extract, mixing well until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the chocolate chips.
- Transfer the cookie dough to the prepared baking pan and spread it out evenly using a spatula
- Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the cookie bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan and transfer them to a cutting board. Slice into bars and serve.
