Oatmeal always takes me back to elementary school when my mom would help make breakfast for me in the mornings. Growing up, I was a super picky eater in the mornings. Breakfast was NOT my jam at all.
It would be a struggle to even put ANYTHING in my stomach. But on the days I DID eat, oatmeal with a little bit of cinnamon and powdered sugar was amazing!
When I started making this recipe my aim was to create that oatmeal experience in cookie form but with a lot less sugar and gluten-free oats. So if you want to add some oatmeal to your morning routine but don’t want a lot of sugar, these breakfast oatmeal cookies are the way to go. They are low in sugar and are not overly sweet.

Breakfast Oatmeal Cookies Ingredients
- eggs
- coconut oil
- almond milk
- cashew butter
- wondrose sugar (sugar-free alternative)
- almond flour
- quick oats
- cinnamon
- baking soda
Making Healthy Swaps
Flour: Ditch the all-purpose flour and swap it for something healthier. For this recipe, I went with almond flour. Sometimes mixing coconut flour with he almond flour creates an optimal texture!
Sugar: Instead of white sugar or brown sugar, this recipe calls for a sugar-free replacer. So think, the taste of sugar but without the unhealthy aspects of it.
Fat: All you need is coconut oil for your fat! You could also try another oil like vegetable oil if you do not have coconut.

How to Eat Breakfast Oatmeal Cookies
This oatmeal recipe taste amazing warmed up in the microwave or room temperature. In addition, adding a dollop of yogurt on top with a sprinkle of more cinnamon makes for a delicious snack/ meal!
To turn these into a dessert, heat up in the microwave and add ice-cream between two cookies and make a sandwich.
You can also crumble these cookies over a bowl of ice cream as toppings! The options are endless!
Storage
These cookies are best stored in the refrigerator or frozen for longer storage. They can stay out on the counter in a cool dry area for a day or two before they start going bad.

Breakfast Oatmeal Cookies
Ingredients
- 2 eggs
- 1 tbsp coconut oil
- 1/2 cup almond milk
- 2 tbsp cashew butter
- 2 tbsp Wondrose sugar
- 2 cups almond flour
- 1/2 tbsp cinnamon
- 1 tsp baking soda
- 2 cups quick oats
Instructions
- Preheat the oven to 350F
- In a bowl mix together coconut oil, almond milk, sugar
- Whisk in eggs
- Stir in cashew butter until combined
- Combine flour, cinnamon, and baking soda in a separate bowl and then pour into the wet ingredients
- Add in oats and stir until combined
- Roll dough in balls and place on a baking sheet
- Bake for 8 mins
- Let sit on a cooling rack for about 5 mins
- Enjoy!
