A warm batch of golden Banana Crumb Muffins is the best way to brighten up any morning! Topped with brown sugar crumbs, these simple and mouthwatering muffins pair wonderfully with your morning coffee! These just MIGHT be the best breakfast muffins you will have!

Banana Crumb Muffins Ingredients

Super easy to make with mostly pantry staples, these muffins are going to knock your socks off!

  • eggs
  • coconut sugar. THIS is my favorite brand
  • coconut oil
  • small bananas (mashed)
  • vanilla extract
  • all-purpose flour. This is my fave brand.
  • Baking soda
  • cinnamon

How to Bake these Banana Crumb Muffins

  • make sure to use very ripe bananas and mash them with a fork or potato masher
  • You do not need an electric mixer for this recipe. Muffins should be mixed as little as possible. Mixing will cause a rather heavy muffin.
  • Make sure to properly grease your muffin pan. Or line it with parchment paper.
  • Do not over-bake! Use a toothpick to see if it is ready! When the toothpick comes out clean with only a few crumbs it is done!

If you want to make this recipe a loaf you can totally do that! Just put it in a 9-inch loaf pan. It will take a bit longer to bake, but it will taste oh so delicious!

How to Store Baked Muffins

Let the muffins cool completely and then store in an airtight container or bag. Muffins can last 2-3 days on the counter nor 7 days in your fridge!

They can also be stored in the freezer, but make sure to place them in an airtight container. They will keep up to 3 months!

Banana Crumb Muffins

Course: Breakfast, Dessert

Ingredients

  • 2 eggs
  • 2/3 cup coconut sugar I used Miss Jones Smart Sugar
  • 1/2 cup coconut oil
  • 2 small bananas mashed
  • 1 tsp vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Crumb topping

  • 4 tbsp unsalted butter
  • 2/3 cup light brown sugar pacled
  • 3/4 cup all purpose flour
  • 2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  • Preheat Oven to 375F
  • Add your eggs, coconut oil, sugar, vanilla extract, and mashed bananas to a medium bowl. Mix together using a spatula or wooden spoon
  • Combine your dry ingredients and pour into your bowl. Mix but not too much.
  • Line your muffin tins or spray it and pour your batter 3/4 the way.
  • Now it is time for the toppings! Combine everything into one small bowl.
  • Using a masher, a fork, or your hands, comobine eveyrhtting together utnilcohesive.
  • Crumble on top of the muffin batter and place into the oven. Bake for 17-20 minutes!
