Banana Chocolate Chip Muffins [Vegan, GF]

These Banana Chocolate Chip Muffins are everything I love about muffins and baking! They’re gluten-free, vegan, and are super duper delicious! Did I mention they are the perfect breakfast option on the go??Banana-Chocolate-Chip-Muffins

I typically love these sorts of recipes for the fall, but I had to use my bananas, and muffins are OBVIOUSLY one of the best ways to do that!

Big chunky sugar filled muffins are great and all BUT a healthy muffin that’s also a delicious muffin??? Well, pffttt that just simply can’t be passed up!

After a few tries, I actually got this recipe down and not tasting awful!! ( HIP HIP HOORAY)

I always enjoy testing out new healthy muffin recipes because they’re (1) quick to make (2) easy to make, and  (3) acceptable to eat for breakfast, lunch, snack time, and even dessert

Banana-Chocolate-Chip-Muffins

WHAT YOU NEED:

To make these beauties is pretty simple.

You will need some bananas on hand (given ), any type of nut butter, ground flax seeds, almond flour, chocolate morsels, baking soda, salt, and vanilla extract.

My favorite almond flour so far is Bob’s Red Mill.  I also use this brand’s coconut flour.  It seems to be the cleanest and best one that I have found.

Here’s what these banana chocolate chip muffins don’t have:

  • refined sugar
  • dry taste that leaves you choking for more water

Simple and nutritious ingredients can create delicious tasting baked goods if you use them correctly that is.  For instance, a little bit of nut butter and can add texture, protein, and even flavor  Complement these flavors with mashed banana instead of refined sugar and you’re in business.

Banana-Chocolate-Chip-MuffinsThe muffins aren’t overly sweet, so you shouldn’t get a sugar rush of any sort.

Banana Chocolate Chip Muffins (Vegan,GF)

Ingredients
  • 2 large bananas
  • 1 cup Nut butter almond/PB/ cashew
  • 2 tbsp ground cinnamon
  • 1.5 tsp vanilla extract
  • 1/4 scoop of vanilla protein powder (can do without)
  • 1 cup of almond flour
  • 1 tsp baking soda
  • 1/4 tsp of salt
  • 1/2 cup chocolate chips

  • 2 large bananas
  • 1 cup Nut butter almond/PB/ cashew
  • 2 tbsp ground cinnamon
  • 1.5 tsp vanilla extract
  • 1/4 scoop of vanilla protein powder (can do without)
  • 1 cup of almond flour
  • 1 tsp baking soda
  • 1/4 tsp of salt
  • 1/2 cup chocolate chips
Instructions
  1. Preheat your oven to 350 degrees. Prep your muffin tin by spraying it with cooking spray or line it with cupcake liners
  2. In a bowl, whisk together mashed bananas, ground flax, vanilla extract, and nut butter
  3. In a separate small bowl, mix your dry ingredients. Once combined add and stir together until combined
  4. Once everything is blended, throw in your chocolate chips
  5. Scoop batter into the tins and bake for 18 minutes or until a toothpick is inserted comes out clean
  6. Let it cool before storing in a container. Can be stored in an airtight container in the fridge
