*Organic, gluten-free, & eco-friendly*
Have you ever felt like eating a completely guilt-free breakfast!? Well, this muffin recipe can certainly satisfy those needs!
This banana chocolate chip oat bran muffin recipe is both gluten free and organic. Hence these muffins are not only nutritious and good for you, but they are environmentally friendly!
With all the organic products being used, we can ensure the release of less environmental pollutants into the air. Additionally, by using dairy-free or organic milk, we are showing compassion towards animals and also supporting efforts to prevent further depletion of our environment’s vitals.
The ingredients used in this recipe are mainly organic and in turn, pose little to no damage to the environment during production.
The liquid ingredients were combined first. These include the milk, honey, coconut oil, and the egg. I used Horizon’s organic lactose-free milk (it’s something I have grown up having since my family members are lactose intolerant). However, you may opt for non-lactose free milk or perhaps almond or cashew milk!
For enhanced eco-friendliness, you are encouraged to use dairy-free or organic milk.
Once the wet ingredients were thoroughly whisked together for about 2 minutes, the dry ingredients were then stirred in. The oat bran, sugar, baking powder, and salt were mixed in a small bowl and then poured into the bowl with the wet ingredients. (I used Bob’s Red Mill’s oat bran hot cereal along with Wholesome’s organic coconut palm sugar
The mixture was stirred until the wet and dry ingredients were fully combined. Lastly, the ripe banana and the chocolate chips were then incorporated into the muffin batter. The chocolate chips I used were dairy-free from a company called Know Better Foods. They specialize in creating foods that are dairy, grain, gluten, wheat, soy, peanut, and yeast-free.
With the oven preheated to 375°F, the muffins were then placed in the oven for 20-25 minutes.
To ensure that the muffins are done, stick a toothpick or knife inside a muffin to see if it comes out clean. If there is no muffin batter left on the toothpick or knife, you may remove the muffins from the oven and place them on a cooling rack. You can enjoy a warm muffin or you can wait until they cool for some time! Either, you can enjoy the guilt-free muffin at any time or place!
Have it for breakfast! Pack it to go! These muffins will not only serve as a healthy snack but they will also provide you with the proper nutrients to sustain and energize you for the day!

- 2 cups Oat Bran Hot Cereal
- 1/4 cups rganic coconut sugar palm sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 1 cup organic milk
- 1/4 cup organic raw honey
