These banana chia breakfast cookies are perfect for breakfast or a healthy snack because there is no added sugar! But don’t worry my friends, they have just the right amount of sweet to satisfy those cravings!

Lately, I’ve been seeing so many no-bake cookies or simple BREAKFAST cookies around Instagram, so I finally decided it was time to make my own version.

When I make recipes, I always try to keep the ingredients short and simple. I don’t always have a lot of time on my hands since I started working full time, so it’s important that I keep my baking sweet and to the point.

That’s why this recipe has LESS THAN 9 ingredients!! LIKE WHAT?!?! I bet you can find most, if not all, of these items in your pantry already!

Let me tell you guys, these banana chia breakfast cookies are GOOD! Also, let;’s not forget, this recipe allows you to have cookies for breakfast. It’s like your childhood dream come true am I right!?

About These Banana Chia Breakfast Cookies

These cookies are made WITHOUT any added sugar ( except perhaps for the sugar in the chocolate chips – which are totally worth it in my opinion) and no eggs or dairy. Therefore, these cookies are vegan and dairy-free.

If you wish to make them gluten-free just make sure to purchase gluten-free oats. You can try Quakers Old Fashioned Oats. Check them out HERE on Amazon.

They are also packed with hearty, healthy ingredients that will help keep you feeling satisfied all morning. Oats, chia seeds, cashew butter, unsweetened shredded coconut... what can you NOT like about this breakfast cookie?? They’re also flourless so the texture might be slightly chewier. But don’t worry, you can always add a little bit of almond flour, if the batter isn’t to your liking.

I’ve eaten them for breakfast or just as a midday snack. They’re perfect for any situation, which makes them so great!! If having chocolate during breakfast time makes you feel weird, you can always skip that ingredient, although I personally LOVE that element. Honestly makes the cookie for me.

The 8 Ingredients You Need

I love this recipe because it’s made with whole grains and is naturally sweetened from the banana. You could even make this a 6 ingredient cookie by omitting the chocolate chips and shredded coconut. Here is what you need:

  • 2 bananas
  • chia seeds
  • unsweetened almond milk
  • old-fashioned oats – I used Quaker oats for this recipe
  • unsweetened shredded coconut
  • creamy cashew butter
  • cinnamon
  • chocolate chips ( I am OBSESSED with Enjoy Life morsels)

Banana Chia Breakfast Cookies Add-in-Ideas

The beautiful thing about this recipe is its simplicity. But, if you’re feeling fancy, you can add more add-ins than me! Here are some suggestions to switch up the flavors:

  • dried fruit: cranberries, raisins, coconut, etc.
  • spices/ seasoning: cinnamon or vanilla extract
  • seeds: flax seeds, pumpkin seeds, chopped almonds, etc.

  • 2 ripe bananas
  • 1 1/2 tbsp Chia Seeds
  • 1/4 cup f almond milk
  • 3/4 cup old fashioned oats ( I used Quaker)
  • 1/3 cup of almond flour
  • 1/4 cup enjoy life chunks
  • 1 tbsp creamy cashew butter
  • 1/4 -1/2 tsp cinnamon

Instructions
  1. Preheat oven to 350F
  2. Mash your bananas in a medium-sized bowl
  3. Measure your chia seeds and mix with bananas
  4. Next, add your milk and stir
  5. Add in your nut butter
  6. Pour in your flour and oats together and combine well
  7. Toss in cinnamon and chocolate chips and MIX
  8. Bake for 12 - 15 minutes or until a toothpick comes out clean
