What better way to improve your diet than by reducing your sugar intake? With so many sugar substitutes in the market, like saccharin (Sweet & Low), aspartame (NutraSweet and Equal) and sucralose (Splenda), there is no other healthier sugar substitute than Stevia.
Distinctively different from other sugars, stevia is derived from a plant. Stevia is a natural, zero-calorie sweetener that can help individuals control their sugar urges without the added calories!!
Another bonus that Stevia has over sugar cane is that it can actually help prevent cavities!! Now before you go to the store and stock your shelves with Stevia, bare in mind that this sugar substitute is quite intense, meaning that a little goes a long way.
While very sweet, it does have a slightly bitter aftertaste. Therefore, ere on the side of caution when substituting Stevia for sugar in your favorite baking recipes. I have found that Stevia cuts the sugar in half for most recipes.
After some research and a Stevia taste test, I decided to try baking with this amazing sugar substitute. We all like to start our day with a nutritious meal, but often times we are too much in a hurry to whip up scrambled eggs with whole-wheat toast.
So, I thought why not start the day with a whole grain, zero sugar breakfast treat that one can grab on the go. With a little Stevia, whole wheat flour, oats and apples, I whipped this delicious Oatmeal Apple Muffins.
These muffins, with a hint of sweetness from the Stevia, and the tartness of the apples with a touch of cinnamon/nutmeg, are so satisfyingly delicious you may never want to eat a sugary muffin again. They are quick and easy to prepare and bake. It only requires 1 ½ tsp of Stevia.
The unsweetened applesauce in this recipe helps to take the bitter edge off the Stevia sugar, and it certainly worked its magic in these muffins.
No butters or eggs in this recipe either. It calls only for ¼ cup of canola oil. Feel free to add nuts or any other fruit for a variety. You can easily bake muffins the night before and pack up for breakfast in the morning! They taste delicious reheated in the microwave too!
I highly recommend giving stevia a try with these tasty muffins and begin the journey of sugar-free healthy treats!!

Oatmeal Apple Muffins [Sugar-Free, Vegan]
Ingredients
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1/2 tsp salt
- 3 tsp baking powder
- 1/4 tsp nutmeg
- 1 1/2 tsp cinnamon
- 1 1/2 tsp Stevia in the Raw
- 1/4 cup unsweetened applesauce
- 3/4 cup almond milk
- 1/4 cup canola oil
- 1 medium apple, chopped
Instructions
- Preheat oven to 375F
- In a bowl add your wet ingredients. Then gently mix dry ingredients
- Do not over mix
- Spray muffin tins with nonstick cooking spray
- Bake for 25-30 minutes or until a toothpick comes out clean
