Healthy Apple Crumble

Are you ever in the mood for apple pie but hesitant about those extra calories you will intake from that heavy/dense crust? Since this healthy apple crumble is both gluten-free and vegan, it fits perfectly in many diets without the extra guilt of those unhealthy calories. It’s the perfect dessert recipe!

This tasty dessert can even be served warm with a side of ice cream or eaten straight from the refrigerator.

You’ll be able to have the taste of an apple pie without the extra added calories.

Who said healthy had to be hard!?

To get started on the filling you will need apples, cornstarch, cinnamon, nutmeg, and light healthy-apple-crumblebrown sugar. In order to create the perfect blend of sour and sweet, I mix Granny Smith, Honey Crisp, and Macintosh apples. You can choose whatever apples you prefer, but this combination seems to work best for me!

Once I’ve peeled and diced my apples I throw in the cornstarch and cinnamon. One of my favorite brands of Cinnamon is the McCormick Ground Cinnamon. I usually alternate between this one and the Kirkland brand I buy from Costco. I also usually leave the nutmeg out, since I am not a huge nutmeg fan!healthy-apple-crumble-recipe

If you want your apple Crumble to have a little sweetness to it, you can add about 1/4 cup of Light Brown Sugar. I don’t always add this though. It depends on my mood !

Instructions

  1. Preheat the oven to 350°F
  2. Spray an 8” -square pan with nonstick cooking spray (I use Market Pantry’s Nonstick Canola Cooking Spray but any nonstick cooking spray will suffice)
  3. To prepare the filling:
    1. Peel and dice your apples.
    2. In a mixing bowl, combine apples, cornstarch, cinnamon, nutmeg and brown sugar (optional) until the apples are completely coated.
  4. To prepare the crumble:
    1. Whisk together the oats ( I use Bob’s Red Mill Old Fashioned Oats) , flour, and cinnamon until fully combined.
    2. Pour in melted butter along with the maple syrup.
  5. Transfer the filling into the pan and gently press down with a spoon or spatula.
  6. Before placing the crumble on top you may add a few dollops of butter on top of your apples in order to help the crumble stick.
  7. Gently pour and spread the crumble atop the apple filling.
  8. Place in the oven for 50-60 minutes or until the apples are cooked to your liking and the oats have a warm, golden brown color.

Allow the apple crumble to cool before eating or just dive right in and serve with a side of ice cream! The apple crumble can stay fresh for about week in a sealed container in the refrigerator.
