Gluten-Free, Vegan, low-fat Healthier Dessert
If there is one thing I have a soft spot for, its desserts. I love them all. Cakes, cookies, ice cream, and so much more! It always makes my day when a little chocolate is involved!
Of course, if you are looking for something sweet you can always take the fruity route and have a berry smoothie, but we all know we need to satisfy those chocolate cravings sometimes ;).
So if you’re like me and crave chocolate or peanut butter or chocolate AND peanut butter, this Healthy Chunky Muddy Buddies Recipe will be just the sweet treat you’ll need this holiday season!
This year was my first year actually ever trying Muddy Buddies, and I’m so glad I did!! It’s the PERFECT holiday treat for yourself or for your guests! It gives you just the right amount of sweet you need after dinner and is amazing to package in cute containers and give as gifts!
Now staying on track during this season is very very difficult. I totally understand! So I concocted my own healthy version of Muddy Buddies. It is vegan, gluten-free and low fat! So this is a great guilt-free treat!!
Start by melting your chocolate (semi0sweet or dark) and peanut butter together. (To make this healthier I used 1/4 cup of Smucker’s Natural Creamy Peanut Butter and 1/4 cup of PB2 or PBfit)
Then pour some Chex Mix in a big bowl and then some of the peanut butter/chocolate mixture on top. It works best when you alternate the two and pour cereal and then the mixture.
Next, make sure to continue mixing it all together until the cereal is completely covered. Then place it somewhere to cool off for a bit before adding the powdered sugar.
If you want your Muddy Buddies to be extremely sweet you can go on ahead and add the powdered sugar right away so more sticks to the Chex Mix.
To easily mix in the powdered sugar, I suggest getting a big plastic Ziploc bag and shaking the cereal with the sugar together. Let it cool down some more and if you want you can add some more powdered sugar on top!
Muddy Buddy Recipe Alterations :
There are very few ingredients in this recipe, but there are multiple ways it can be made.
Chocolate: If you do not care about it being vegan, you can use Ghirardelli Chocolate instead of the Enjoy Life Morsels .
Peanut Butter: I suggest using Smuckers Peanut Butter because it is all natural. To make it even healthier, mixed in some PB2 peanut butter as well.
