  • Overripe Banana: For maximum sweetness, use a super ripe banana. You can even use a medium banana! 
  • Melted butter: I used unsalted so I could control the salt content. You ca also use vegetable oil or shortening. 
  • Brown sugar: brown sugar will keep your cookies chewy and soft. if your banana is super ripe, you can adjust the sugar to your preferred sweetness level. 
  • Egg yolk: this will help give your cookies structure
  • Vanilla Extract: a splash of extract will give your cookies the best flavor! 
  • All purpose flour: All purpose flour will give you the perfect crumb for your banana bread chocolate chip cookies. 
  • Baking Soda: This will help your cookies rise and have that cookie crinkly top.
  • Ground cinnamon: adds such a cozy flavor to these cookies
  • Chocolate Chips: Obviously good banana bread needs some chocolate chips! Add your favorite brand and style!

Tips for the Best Banana Bread Chocolate Chip Cookies

  • Use overripe bananas: The key to the best banana flavor is using overripe bananas. Look for bananas that are heavily spotted or even turning black. The riper the banana, the sweeter and more flavorful your cookies will be.
  • Don't overm mix the batter: Once you add the dry ingredients to the wet ingredients, mix until just combined. Overmixing can result in tough cookies.
  • Bake until just set: For perfectly chewy cookies, bake them until the edges are just set and the centers look slightly underdone. They will continue to cook on the baking sheet as they cool, resulting in a soft, tender texture.

Banana Bread Chocolate Chip Cookies

Ingredients

  • 1 small overripe banana
  • 1/2 cup melted butter
  • 3/4 cup packed, light brown sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cups chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. Set aside
  • In a large mixing bowl, mash the overripe banana until smooth.
  • Add the melted butter and packed light brown sugar to the mashed banana. Mix until well combined.
  • Stir in the egg yolk and vanilla extract, mixing until the ingredients are fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  • Gently fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown and the centers are set but still soft. The cookies will continue to firm up as they cool.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
