Brown Sugar Cinnamon Pop Tart Bars Ingredients

  • Unsalted Butter: Adds richness and moisture. Melting it makes it easier to incorporate into the batter.
  • Egg: Provides structure and helps bind the ingredients together.
  • Vanilla Extract: Adds warmth and enhances the overall flavor.
  • All-Purpose Flour: The base of the batter, providing structure.
  • Coconut Sugar and Brown Sugar: Combine to create a deep, caramel-like flavor.
  • Ground Cinnamon: Adds the classic cinnamon roll flavor.
  • Baking Powder: Helps the cake layer rise and become fluffy.

How to Make Cinnamon Pop Tart Bars

  • Preheat oven 350F. Grease an 8x8 baking dish.
  • In a large bowl combine the flour, sugar, baking powder, salt, egg, milk, and vanilla. Stir in melted butter. Pour the mixture in to the pan. This will be your base layer.
  • Make cinnamon layer by combining all ingredients together until smooth. 
  • Drop spoonfuls evenly over the top of the cake batter. 
  • Make another layer of cake and smooth on top of your cinnamon layer.

  3. Cinnamon-Sugar Filling: Be generous with the filling! It’s the star of the show and gives these bars their signature flavor.

    Cinnamon Roll Cookie Bars

    Ingredients

    Bottom Cake Layer

    • 1/2 cup sugar
    • 1/4 cup unsalted butter, melted
    • 1 egg
    • 1 tsp vanilla extract
    • 1 1/2 cups all purpose flour
    • 2 tsp baking powder
    • pinch salt

    Top Cake Layer

    • 1/4 cup sugar
    • 3 tbsp unsalted butter, melted
    • 1 egg yolk
    • 3/4 cup flour
    • 1 tsp baking soda
    • 1/2 tsp vanilla extract
    • pinch of salt

    Cinnamon Sugar Filling

    • 1/4 cup coconut sugar
    • 1/4 cup brown sugar
    • 1 tbsp ground cinnamon
    • 1/2 cup buttere softened
    • 2 tbsp flour

    Frosting

    • 1 1/2 cups powdered sugar
    • 1/4 cup unsalted butter, melted
    • 2 tsp vanilla extract
    • 3-4 tbsp milk

    Instructions

    • Preheat oven to 350 degrees F. Grease an 8×8'' baking dish.
    • In a large bowl combine the flour, sugar, baking powder, salt, milk, egg and vanilla. Stir in melted butter. Pour mixture into prepared pan and smooth into an even layer. (This will be your base)
    • Make the cinnamon sugar filling by combing all ingredients together until smooth.
    • Drop small spoonfuls of the mixture evenly over the top of the cake batter. Use a knife to smooth over the cake.
    • Bake 30-37 minutes or until a toothpick inserted in the center comes out clean. Make your frosting and spread over your cake once it is cooled.
    • The cake is best served the same day.
