  • Greek yogurt: make these muffins healthier because they are a great source of protein. It also adds moisture, flavor, and helps keep these muffins light and fluffy. Sour cream would also work.

  • All purpose flour: this makes the muffins come so moist

Healthy Double Chocolate Banana Muffins

Ingredients

  • 2 large ripe bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup plain Greek yogurt
  • 1/2 cup chocolate morsels or chunks

Instructions

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, mash the ripe bananas using a fork.
  • Add honey or maple syrup, melted coconut oil, egg, and vanilla extract to the mashed bananas. Mix well until everything is well combined.
  • In a separate bowl, whisk together whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients and stir until just combined. Avoid overmixing.
  •  Fold in the Greek yogurt, dark chocolate chips, and chopped nuts if using.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
