  • Coconut sugar: Use whatever sugar you like. If you want to keep it low sugar you can use Swerve.
  • Vanilla extract: you always need a touch of vanilla!
  • Flour: any flour you like will work! I almost always use King Arthur flour!
  • Baking powder: the secret to extra fluffy pancakes is baking powder!
  • Vegan butter: This gives your pancakes such a rich and creamy flavor.
  • DF chocolate chips: the star of the show! I used Enjoy Life dairy-free morsels!

Tips & Tricks

  • Let your pancake batter rest! It allows the baking powder to work and gives you fluffy pancakes.
  • Make sure your skillet is hot before adding the batter.
  • You can meal prep and freeze your pancakes. Let them cool completely on a wire rack, then wrap each pancake in wax paper and store them, flat and stack in a freezer bag.

Vegan Chocolate Chip Pancakes

Ingredients

  • 1 cup dairy-free milk
  • 2 tbsp coconut sugar
  • 1/2 tsp vanilla extract
  • 1 cup flour
  • 1 tbsp baking powder
  • 1 tbsp vegan butter
  • 3/4 cup dairy-free chocolate chips

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, and sweetener.
  • Add the melted butter, milk, and vanilla to the bowl and mix together to form a mostly smooth, slightly thick pancake batter. Do not over mix.
  • Gently fold in the chocolate chips.
  • Heat a greased skillet over medium-high heat and drop ¼ cup of batter down for each pancake.
  • Serve and top your pancakes to your liking!
