Sharing is caring!

If you love cookies and you love cake, then you’ll definitely want to try this recipe for a cookie butter mug cake. This single-serving dessert is soft with a gooey center. It’s the perfect treat for when you’re craving something sweet but don’t want to go to the trouble of making a whole batch of cookies or a full-size cake.

What is Cookie Butter?

Cookie butter is a spread made from ground-up cookies, usually of the speculoos variety, which are a type of spiced shortbread cookie. It has a rich, creamy texture and a deep, caramelized flavor that is reminiscent of both cookies and caramel. It’s often compared to peanut butter, but with a distinct cookie flavor.

Cookie butter can be found at many grocery stores, either in the spreads aisle or in the international section. It’s also available online. If you can’t find cookie butter, you can try using another type of flavored spread, such as Nutella or peanut butter, although the flavor will be different. The cookie butter I used for this recipe is Biscoff.

Cookie Butter Mug Cake Ingredients

  • Oat flour: Make sure to measure flour correctly
  • Quick oats:
  • Baking powder: This is what gives the mug cake the perfect light texture.
  • Coconut sugar: Adds the perfect touch of sweetness to the cake.
  • Milk: I used almond milk but you can use whatever you want
  • Biscoff Cookie Butter: The key ingredient! Cookie butter in the center will take this recipe to the next level.

Optional toppings

If you want to add some extra flair to your mug cake, you can top it with some whipped cream, chocolate chips, or chopped nuts. These toppings will add some extra flavor and texture to the mug cake.

You can also try experimenting with different flavors of cookie butter. For example, you could use a chocolate or a hazelnut cookie butter for a twist on the classic recipe.

Recipe Tips & Tricks

  • Make sure to measure the ingredients accurately. To measure correctly, make sure you scoop the flour with a spoon into your measuring cup. Scrap the top with a knife to make it even.
  • This particular recipe is made in the oven, but can made in the microwave for a few minutes until he cake is cooked. The less time the softer and more gooey it will be. Depending on how strong your microwave is, you may need to adjust the time. Microwave for about 3 minutes.

FAQs

How do I know when my mug cake is cooked?

Once your cookie butter mug cake is done, it should still have a slightly wet and sticky center. If it is too wet and jiggles too much, then put it back ion for another minute.

How do I store my mug cake?

Mug cakes are best eaten right away. If you have leftovers, you can keep it in the mug and reheat in the microwave the next day. Do not try to freeze your mug cake!
