This warm and cozy Apple Cinnamon Baked Oatmeal is made with old fashioned oats, fresh apples, and some classic maple syrup. It is the perfect filling breakfast or snack and is one of my favorite fall recipes to make!

There is something about baked oatmeal that makes me feel all warm and fuzzy inside. It is amazing for meal prep and is typically made with eggs, old fashioned oats, and milk.

Ingredients You’ll Need to Make Apple Cinnamon Baked Oats

  • Eggs: this is to help bind everything together
  • Old fashioned oats: if you have a gluten allergy be sure to swap these out for GF oats
  • Unsweetened applesauce: using unsweetened applesauce allows you to control your sugar content more easily
  • Maple syrup: this recipe calls for maple syrup since it adds to the warm and cozy feeling of this classic dish. You could also sue honey if you prefer
  • Almond milk: My got to for baking. Almond milk has a neutral flavor that blends well when baking. Plus, it is dairy free!
  • Melted butter: butter adds a richness to all types of desserts and especially to this baked oatmeal!
  • Vanilla extract: a MUST in literally everything I bake.
  • Fresh apples: fresh diced apples give more texture and flavor to this breakfast

  • dried fruit: adding a handful of dried raisins, cranberries, or coconut flakes would be delicious
  • fall spices: feel free to have fun with this. My go to is always cinnamon, but there are plenty of warming spices that you can use!
  • chopped nuts: nuts go perfect with baked oatmeal. Add walnuts, sliced almonds, or pecans,

How to Serve Apple Cinnamon Baked Oatmeal

There are so many ways to serve this apple cinnamon baked oatmeal! You can get fun with your toppings. Here are just a few that I like:

  • Drizzle a glaze or frosting. this can easily be made with powdered sugar and almond milk
  • pour a bit of maple syrup and honey
  • Add a dollop of pb or greek yogurt
  • Sprinkle on some cinnamon or add cut apple slices

How to Store Leftover Apple Cinnamon Baked Oatmeal

  • Store the baked oatmeal in an airtight container for 4-5 days in the fridge
  • Reheat the oatmeal in the microwave for 30 seconds at a time or in the oven. Bake at 350F wrapped in foil until warmed.

What can I use instead of butter?

Melted coconut oil would work well for this recipe! You can even brown your butter.

Do I have to use dairy-free milk?

Of course not! You can use whatever milk you desire. I tend to use mostly almond milk!

Can I use flax eggs?

Totally! You can also use your favorite egg replacement instead. This is my favorite one to use and it works like a charm!

Can I use fruit instead of apples?

Feel free to use whatever fruit you like, although I think apples are a great choice!

Can you freeze this apple cinnamon baked oatmeal?

Yes! To freeze the oatmeal let it cool completely and then transfer to a freezer safe storage bag. You can reheat at 350F in the oven wrapped in foil

Apple Cinnamon Baked Oatmeal

Ingredients

  • 2 eggs
  • 1/2 cup maple syrup
  • 1/4 cup melted butter
  • 1/2 cup unsweetened applesauce
  • 1 1/4 cup unsweetened almond milk
  • 2 1/2 cups old fashioned oats
  • 1/2 tbsp cinnamon
  • 1/2 tbsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 -2 cups peeled and diced

Instructions

  • Preheat oven to 350F
  • In a large mixing bowl, add your wet ingredients. Whisk until well combined
  • Next, add the oats, baking powder, ground cinnamon, cinnamon, and salt to the bowl. Fold in to the wet ingredients.
  • transfer oatmeal batter to a greased 9 x13 or 8×8 baking dish.
  • Bake at 350F for about 25-30 until the oatmeal is just set
  • Serve with a drizzle of icing
