Baking with pumpkin can definitely be tricky because it is so moist.

Using Pumpkin often results in a more “cake-like” texture. Because of that I omitted eggs and made these cookies vegan.

These vegan pumpkin spice cookies have the consistency of your normal chocolate chip cookie and it’s amazing!

Store cookies covered at room temperature for up to 3 days. Store in fridge for up to 7 days.

Can I freeze these?

Absolutely Make sure to wrap them tightly and freeze.

Can I use gluten-free flour?

I recommend using one that is 1:1 substitution. Bob’s Red Mill and King Arthur Flour are great options.

What do these cookies taste like?

They taste like normal chocolate chip cookies but with pumpkin, white chocolate, and latte chips instead!

Vegan Pumpkin Spice Latte Cookies

Ingredients

  • 1/2 cup vegan butter
  • 1 egg replacer
  • 1 tsp vanilla extract
  • 1/2 cup coconut sigar (packed)
  • 1/4 cup maple syrup
  • 1 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup Nestle Pumpkin Spice Latte Morsels

Instructions

  • Preheat to 350 F° and prepare two baking sheets with pachment paper.
  • Melt your vegan butter and add to a medium bowl.
  • Next add your egg replacer, vanilla extract, maple syrup and coconut sugar.
  • Then, add in the flour, pumpkin pie spice, salt, and baking soda. Make sure to add the flour first and then add the other ingredients on top.
  • Then, fold in ½ cup of the chips using a spoon or spatula until evenly distributed.
  • Ad to the oven and bake for 10-12 minutes until edges are beginning to brown, but center is still soft yet no longer glossy.
