Vegan Pumpkin Spice Latte Cookies
Ingredients
- 1/2 cup vegan butter
- 1 egg replacer
- 1 tsp vanilla extract
- 1/2 cup coconut sigar (packed)
- 1/4 cup maple syrup
- 1 1/2 cup all purpose flour
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1 cup Nestle Pumpkin Spice Latte Morsels
Instructions
- Preheat to 350 F° and prepare two baking sheets with pachment paper.
- Melt your vegan butter and add to a medium bowl.
- Next add your egg replacer, vanilla extract, maple syrup and coconut sugar.
- Then, add in the flour, pumpkin pie spice, salt, and baking soda. Make sure to add the flour first and then add the other ingredients on top.
- Then, fold in ½ cup of the chips using a spoon or spatula until evenly distributed.
- Ad to the oven and bake for 10-12 minutes until edges are beginning to brown, but center is still soft yet no longer glossy.
