Want pancakes for breakfast without all the flipping and standing? Maybe you aren’t the best pancake flipper like me, and this will literally save your life. Hahahah! Whatever the reason, these are super easy to make and are great for feeding a large group of people.
You truly can’t beat these quick “pancakes”. They can take over your Sunday stacks or maybe be a weekday tradition with the kids! Do you! This is your time to make breakfast fun and completely your own!
Did I mention that these Mini Paleo Pancake Bites are not only versatile, but they are also paleo and dairy-free! YASSS!! I know these may look like muffins to you, but in person, they were not quite as big as muffins so we are going with bites! They are probably two big bites LOL!
Mini Paleo Pancake Bites Ingredients
- Birch Benders paleo mix
- Almond milk
- Vanilla extract
- Cinnamon
- Organifi
- Baking Powder
- Toppings –> sprinkles, chocolate, pb etc.
How Do You Make Mini Pancake Bites?
Luckily for you, these pancake bites are rather simple to throw together. Whip up the batter using you Birch Bender’s flour mixture, pour it in your pan, and add your toppings of choice.
You can pick whatever toppings you want! I went with fun options, so if you want something healthier you can totally do that!
Topping Options:
There are so many ways you can go with this! I want you guys to have fun, but here are some ideas for you!
- Chocolate morsels (you can use healthier chocolate like Choczero or Lily’s keto chocolates)
- Blueberries
- Sprinkles
- Peanut butter
- Chopped nuts
How to Freeze Mini Paleo Pancake Bites:
- Place pancake bites on a rack to cool
- When they are completely cooled, put them in a tightly sealed Ziploc freezer bag
- Freeze for up to a month or 2
- When you are ready to use, remove from bag and heat them up in your microwave
You can also refrigerate your pancake bites for up to 4 days!

Mini Paleo Pancake Bites
Ingredients
- 1 1/2 cup Birchbenders paleo pancake mix
- 1 cup almond milk
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 scoop Organifi (not necessary – can put collagen)
- 1 tsp baking powder
Instructions
- Preheat oven to 350 F2
- Mix all your ingredients in a bowl.
- Get a small muffin pan and use non stick spray to coat the inside of the pan
- Pour your batter in 3/4 of the way.
- Add your toppings and place in the oven for 12-15 minutes
