Chocolate chip blondies so gooey you can’t even tell they’re healthy! Made with cashew butter, almond flour, and chocolate chunks, this is the perfect spin on a classic blondie recipe.

If you haven’t heard of blondies before, they are basically brownies without the cocoa powder. They typically have a rich vanilla butterscotch flavor instead. This recipe will be an easy one to test out since all you need are a few ingredients and one bowl!

before we dive in, I have to. admit something first. When first saw the idea for chocolate chip blondies throughout Instagram, I thought it was super silly. Doesn’t adding chocolate kinda defeat the purpose of it being a blondie?

I think I still feel that deep down this is not a true blondie because of the Chocolate morsel, but I don’t know. Am I crazy? Does anyone agree with me here lol.

However, this will give me an excuse to make an even better blondie next time mwahah!

Ingredients for Chocolate Chip Blondies

Notes:

If you don’t have cassava flour, feel free to substitute with regular white flour.

If cashew butter isn’t your speed you can use another one, but be careful, using peanut butter or almond butter will give it a much nuttier taste. Cashew butter is way. more neutral in my opinion!

Another important thing to do if you are using butter, is to brown the butter. To do this place your butter on a skillet and watch to see if it. starts to get. brown flakes on top. It is easier t see if you are. using a light colored pan. This helps give the chocolate chip blondies that classic butterscotch-esque flavor.

Baking Tips

Spray your pan: This may seem like common sense but… I have not sprayed my pan before and it’s been a disaster.

Let it cool: I BREAK THIS RULE EVERY TIME. IT’S SO HARD. Patience is not one of my strong suits and my desserts are still hot when I try to dig in. Many burnt mouths later and I can say. Unfortunately, I will most likely be doing it again LOL. I only have myself to blame at this point.

Pan size: I was supposed to use an 8×8 pan for this, but couldn’t find it so I used my small loaf pan. If you use 8×8 pan I would cook it for maybe 15 minutes. If you do a loaf pan you will need more time. 20-25 minutes probably.

How Do You Know When Blondies are Cooked?

You know when your blondies bars are done when they start to turn golden brown on the edges.

Toothpick test: Nothing like the old toothpick test! You can also do a test in the center of your blondies when the timer on the oven rings. Insert the toothpick into the blondies and immediately remove it. If the batter is not wet or sticking, your blondies are done! Hip hip hooray!

Storage for these Chocolate Chip Blondies

You should store these blondies in an airtight container in the refrigerator or on a dark area of your countertop. They. should. last up to 5 days.

You can also freeze your blondie bars! Place your sliced blondies on a baking sheet and then place in the freezer. Make sure to remove as much air from your bag and then seal shut.

Chocolate Chip Blondie Bars

Course: Dessert

Ingredients

  • 1 egg
  • 1/2 cup cashew butter
  • 1/4 cup butter (browned) can use coconut. oil instead
  • 1 1/2 tsp vanilla extract
  • 3/4 cup coconut sugar
  • 1/2 cup almond flour
  • 1/4 cup cassava flour or 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 cup chocolate chunks

Instructions

  • Preheat oven to 350F and prepare a small loaf pan with parchent paper
  • In a medium bowl, mix together cashew butter, melted butter, egg, and vanilla extract
  • Add in flours, coconut sugar, and baking soda. Fold in the chocolate chips
  • Transfer to baking pan and spread evenly. Add extra chocolate chips on top
  • Bake for 20-25 minutes! Allow to cool for 5 minutes before moving to a baking rack.
