Since I’ve been working from home a bit more, the need to bake a billion new healthy recipes has been high.
Once I’m done eating one meal, I’m already thinking about baking something later in the day. Of course, anything with chocolate is my numba one choice.
That is how these chocolate chip cookie bars came into existence!
These babies are made with just 6 key ingredients that are all vegan and paleo! Plus this recipe is done in less than 30 minutes and comes super fudge!! Ugh I can’t stop raving about them enough.
When these come out of the oven, the chocolate pretty much melts in your mouth! What more could you ask for!?!?
Chocolate Chip Cookie Bars Ingredients
You only need a few staple ingredients to whip up a batch of these bars.
Flax egg: using ground flax is always good to have on hand, especially when you wanna make flax eggs. They are super easy to make (just mix 1 tbsp of ground flax with 3 tbsp of water). You can also use a regular egg if you want!
Cashew butter – Any creamy nut butter works for this, but I love using cashew butter the most!!! I feel like almond and peanut butter definitely have flavors that overpower your dessert.
Coconut sugar: This is one of my favorite types of sugar that isn’t refined! It adds the perfect amount of sweetness to your bars!
Almond milk: Any non-dairy milk works here. I recommend using one without added sugars. Almond milk is just my normal go to so that is what I used, but coconut milk works just the same!
Almond flour: When making healthy treats, almond flour is definitely a go to of mine!
Coconut flour: Recently I noticed that when I added a little bit of coconut flour with my almond flour, the texture and flavor or my desserts came even better! However, coconut flour is NOT necessary for this recipe. You can use 100% almond flour!
Chocolate: A MUST IN MY BOOK!!! The more chocolate the better! I love using Enjoy Life Chocolate chunks because they melt so beautifully on top! **SWOON**
TIPS
- I would use a banana loaf pan for these to make them come extra thick and even gooier!
- The more chocolate the merrier!!
Storage

Chocolate Chip Cookie Bars [Paleo + Vegan]
Ingredients
- 1 flax egg (1 tbsp ground flax + 3 tbsp water)
- 1/2 cup creamy cashew butter
- 2/3 cup coconut sugar
- 1/4 cup unsweetened almond milk
- 1 tsp baking powder
- 1 cup almond flour
- 1/4 cup coconut flour
- 3/4 cup chocolate morsels or chunks
Instructions
- Preheat the oven to 350 degrees and one loaf pan with parchment paper.
- Make your flax in a bowl. Add your sugar, nut butter, and milk. Stir until smooth.
- Pour in your almond & coconut flour until fully combined. Mix well.
- Fold in chocolate chips then bake for about 20-25 minutes
- Let the bars cool for a bit and then cut! enjoy!
